Spinach Cheese Strata

Ingredients:     (6 servings)        Submitted by: Mary Laffey
  • 1/2 cup chopped onion
  • 1/4 cup chopped sweet red pepper
  • 1/4 cup chopped green pepper
  • 2 tablespoons butter or margarine
  • 1 (10 ounce) package frozen chopped spinach, thawed and well drained
  • 2 cups Wheat Chex® cereal
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup shredded Swiss cheese
  • 6 eggs
  • 2 cups milk
  • 1/3 cup crumbled cooked bacon
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper

Directions:

  1. In a skillet, saute the onion and peppers in butter until crisp-tender. Remove from the heat. Add spinach and cereal; mix well. Spoon into a greased 11-in. x 7-in. x 2-in. baking dish. Sprinkle with cheese. In a bowl, combine the eggs, milk, bacon, mustard, salt and pepper. Pour over cheese. Bake at 325 degrees F for 45-50 minutes or until knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

Dilly Ham & Eggs

Ingredients:      (8 servings)                   Submitted by: Pat Yielding
  • 1 1/2 cups diced fully cooked ham
  • 1 large onion, chopped
  • 1 cup chopped green pepper
  • 2 tablespoons butter or margarine
  • 1 1/4 cups shredded Cheddar cheese, divided
  • 10 eggs
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 cup chopped green onions
  • 1 (2 ounce) jar diced pimientos, drained
  • 2 tablespoons picante sauce
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dill weed
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  1. In a skillet, saute ham, onion and green pepper in butter until vegetables are crisp-tender. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with 3/4 cup cheese. In a bowl, beat eggs, sour cream and milk; mix in the next eight ingredients. Pour into the baking dish. Bake, uncovered, at 350 degrees F for 25-30 minutes or until eggs are set. Top with remaining cheese.

Sausage Egg Squares

Ingredients:           (6 servings)               Submitted by: Myrna Duke
  • 1/2 lb. Italian Turkey sausage links, casings removed
  • 1/2 medium green pepper, chopped
  • 1/2 small onion chopped
  • 1/2 (16 ounce) package small curd 1% cottage cheese
  • 1 cup shredded reduce-fat Cheddar cheese
  • 3/4 cup egg substitute
  • 1/2 cup fat-free milk
  • 1/2 cup reduced-fat biscuit/baking mix
  • 1/2 (4 ounce) can chopped chilies 

Directions:

  1. In a large non-stick skillet, cook sausage, green pepper and onion over medium heat until meat is no longer pink; drain, stir in the remaining ingredients. Pour into a 13-in x 9-in x 2-in, baking dish coated with non-stick cooking spray. bake at 350 degrees F for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
